Wild Garlic Pesto

In the forest, in shady places near water, you find wild garlic. You can make a delicious pesto out of it. Why don‘t you collect these delicat leaves during your next outing to the forest!

I always  make a lot of the pesto, because my family loves it and it makes a special present to friends.

You need:
6 hands full of wild garlic
Juice of one half or one fresh squeezed lemon
2 cloves of garlic
salt
oil
citrus press
Glass with a screw cap
Bar mixer

Please wash the wild garlic very well. I soak it for 15-20 minutes in soda water. Afterwards rinse it well and drain it. Mix the wild garlic, the lemon juice, the garlic cloves and the salt with the bar mixer. Then pour the mass into a glass and your pesto is ready! To make the pesto hold longer, I put some oil on top of the mixture before closing the glass.

I use it to pimp up my salads, vegetables or pasta.
